Omelette Soufflé (Omelete me Miell) in the Oven

Omelette is a fantastic dish and in Albania, we usually eat it in the morning. It is a delicious dish but also very nutritious. And most importantly, it is a very versatile dish, you can add or change ingridients according to your taste and preference. Well, not all dishes accept intervention in the recipe.

The characteristic of this omelette is its puffiness and that it is baked in the oven. The taste may resemble Crepes a bit, probably because most of the ingredients are the same. This recipe is for 2 people.

Recipe for Soufflé Omelette

Ingredients:

- 3 tablespoons of olive oil

- 1 cup flou(all-purpose)

- 1 cup of milk (3.7% fat)

- 1/4 cup of water

- 1/2 teaspoon salt

- 3 large eggs (or 4 small)

- about 1/2 teaspoon of Baking Powder

Tools needed:

- 1 baking pan (mine is 26cm x 26cm x 4cm)

- baking sheet

- 1 large bowl

PREPARATION

1 - In a large bowl put the flour, the water, the milk and the salt. Whisk well, we don't want any lumps in the batter, and let it stand for 30 minutes (for more time keep it in the refrigerator).

2 - After 30 minutes, put the baking sheet in the baking pan, add 1 tablespoon of oil and put the pan in the oven for 5 minutes at 170 Degrees Celsius.

3 - Now add Baking Powder to the cup and mix very well.

4 - Add the eggs, oil and beat the batter well again for 2 minutes.

5 - Now, take the baking pan out of the oven, pour the batter into the pan, and immediately put the pan in the oven. Bake for 20 minutes at 170 degrees.

6 - When baking, don't open the oven door. When Omelette gets a golden color, it is ready. We let it stay in the oven for 5 minutes.

The omelette is served warm and with feta cheese on the side. That's it.
